    These veggie-packed firecracker ground chicken lettuce wraps are a quick and easy weeknight dinner that you’ll want to make on repeat. Perfect for meal prepping as well, these firecracker lettuce wraps are loaded with sweet and spicy flavor!

    Why You’ll Love This Recipe

    • It is so easy to load up on your veggies with this firecracker ground chicken recipe! There are so many more variations of this to get even more vegetables into the recipe. I’ll share some extra examples in the recipe tips section.
    • It takes around 20 minutes to cook up on the stove top, making it an easy weeknight meal that you don’t have to fuss over too much after a long, busy work day.
    • Not a fan of lettuce wraps? Serve it over rice or noodles! Want both? Chop up the lettuce so it turns into a salad with rice! There’s so much you can do with this firecracker chicken.

    Ingredients You’ll Need

    Ingredients needed to make firecracker ground chicken lettuce wraps.

    firecracker sauce — the ingredients for this homemade firecracker sauce are always in my pantry, as I love making my firecracker beef, firecracker chicken thighs, and firecracker meatballs! You’ll need sriracha, brown sugar, soy sauce, red pepper flakes, salt, and a splash of water. I like using dark brown sugar as it has a deeper caramel note, but you can also use regular or light brown sugar.

    oil — I use olive oil, but you can use any neutral oil to cook everything in.

    onion — I use a yellow onion, but you can also use a sweet onion or even shallots!

    garlic — the more garlic, the better!

    salt — I usually use diamond kosher salt.

    ground chicken — I’m using lean ground chicken, but feel free to use what you have on hand! You can also swap the ground chicken for ground turkey.

    coleslaw — I buy the pre-cut bags of cabbage mix at my grocery store to save time. You can shred your own cabbage, but I find that the bagged coleslaw is much more convenient. You can also swap this for broccoli slaw as well! I’ve accidentally grabbed broccoli slaw before, as they’re side by side on the shelf, and the recipe comes out just as delicious. This is such an easy way to get extra vegetables into a dish.

    carrots — I buy the pre-cut matchstick carrots again to save time. If you buy a bag and can’t finish it, you can put it in the freezer! That’s what I do. Then I just grab what I need from the freezer over the next few weeks.

    edamame — I love having frozen edamame on hand as it cooks up quickly in the skillet and is an easy way to boost protein and fiber in the dish (source).

    lettuce — use your favorite lettuce for your lettuce cups. I usually use Boston lettuce.

    garnishes — I like to top these lettuce wraps with green onions and roasted sesame seeds. I also like to add some microgreens to each wrap just to squeeze a little extra greens into each bite! If you’re making this for little ones and they’re on the pickier side, it’s much easier to just top some off and skip a few wraps for them!

    How to Make Firecracker Ground Chicken Lettuce Wraps

    • In a small bowl, combine the sriracha, brown sugar, soy sauce, red chili flakes, salt, and a tablespoon of water. Mix until well combined and set aside.
    • Heat the oil in a large skillet over medium heat and add the diced onions. Saute for 2 minutes. Add the minced garlic and salt and saute for another minute.

    • Add the ground chicken to the skillet.
    • Cook for 6 to 7 minutes, making sure to break up the pieces, until fully cooked through.

    • Mix well to combine and allow everything to cook for around 5 minutes or until the frozen edamame has cooked through and the vegetables have softened to your liking.
    • Then assemble your lettuce cups by adding the firecracker chicken to the lettuce and garnish with green onions, roasted sesame seeds, and mircogreens.

    Recipe Tips and Notes

    • There will be a bit of liquid at the bottom of the skillet thanks to the colesaw, so you can omit the water from the sauce if you desire. However, I like to store the ground chicken with the liquid as it helps the chicken stay moist when reheated!
    • I recommend cooking the ground chicken all the way through before adding the vegetables.
    • The larger the skillet you have, the better as there is quite a bit of veggies in this dish!
    • Want more veggies? You can also add sliced bell peppers, corn, peas, broccoli, cauliflower, and zucchini. You can also serve this over cauliflower rice if you prefer this recipe to be in bowl form.

    Make Ahead Tips

    • Meal prep: once cooled, store the ground chicken in an airtight container for up to 4 days in the fridge. Leave the lettuce on the side so you can reheat it easily.
    • Freezer: allow the firecracker ground chicken to cool before transferring into an airtight container and storing in the freezer. Store for up to 3 months.

    Ingredients

    For the Firecracker Sauce

    For Everything Else

    • 1 tablespoon oil
    • 1 small onion, finely diced
    • 1 tablespoon minced garlic
    • 1 teaspoon salt
    • 1 pound ground chicken
    • 14 ounces coleslaw mix, (1 bag)
    • 1 cup matchstick carrots
    • 1 cup frozen edamame
    • 1 head lettuce
    • green onions
    • roasted sesame seeds
    • microgreens

    Instructions

    • In a small bowl, combine the sriracha, brown sugar, soy sauce, red chili flakes, salt, and a tablespoon of water. Mix until well combined and set aside.

    • Heat the oil in a large skillet over medium heat and add the diced onions. Saute for 2 minutes. Add the minced garlic and salt and saute for another minute.

    • Push the onions and garlic to the side of the skillet, add the ground chicken to the center of the skillet, and cook for 6 to 7 minutes. Make sure to break up the pieces until fully cooked through.

    • Add the coleslaw, carrots, edamame, and sauce to the skillet. Mix well to combine and allow everything to cook for around 5 minutes or until the frozen edamame has cooked through and the vegetables have softened to your liking.

    • Assemble your lettuce cups by adding the firecracker chicken to the lettuce and garnish with green onions, roasted sesame seeds, and microgreens.
