    Made with just a handful of ingredients, this peanut butter and jelly stuffed dates recipe is an easy sweet treat that makes for the perfect snack or appetizer. A throwback to your favorite flavors of your childhood PB&J sandwich, this stuffed dates recipe will hit the spot.

    A perfect treat for both adults and kids, these peanut butter stuffed dates with jam, peanuts, and freeze-dried strawberries are so easy to whip up! These little sweet and savory bites will disappear quickly.

    • It’s super easy to make these pb&j stuffed dates. They don’t require any cooking and they come together in a flash.
    • This is the perfect mid-day snack that you can prep ahead of time! They keep really well in the fridge, so you can make them ahead of time and just grab one or two as needed!
    • There’s a good chance a majority of the ingredients are already in your fridge!

    Ingredients You’ll Need

    Ingredients needed to make peanut butter and jelly stuffed dates.

    dates — you can purchase medjool dates that are already pitted or pit them yourself. It doesn’t take that much more effort to DIY, so I usually just buy whichever one costs less at the moment. 

    peanut butter — can’t have a peanut butter and jelly recipe without pb! I recommend using natural, runny peanut butter as it’s easier to spread into the dates.

    jam — you can use chia jam (check out my homemade raspberry chia jam recipe or strawberry chia jam recipe!) or regular jam for that fun jelly flavor! I usually use my homemade recipe since it doesn’t take a lot of effort to make and there isn’t a lot of added sugar, but regular store-bought jam is totally fine!

    roasted peanuts — some chopped roasted peanuts add a nice crunch to the stuffed dates.

    freeze-dried strawberries — I love the extra crunch that the freezer-dried strawberries add. I love the light and airy texture of them and have a great strawberry flavor.

    How to Make Peanut Butter and Jelly Stuffed Dates

    • Cut the medjool dates in half length-wise, but leave them partially intact on the backside, so you can open the dates like a book. Remove the pit from each date.
    • Spread around one teaspoon of peanut butter into each date.

    • Add approximately one teaspoon of jam into each date.
    • Top with roasted peanuts (gently press them into the filling if needed) and then sprinkle the chopped freeze dried strawberries on top.
    • Gently close each date and serve.

    Recipe Tips and Notes

    • If you’re worried about spreading the peanut butter and jelly into the dates, you can always add them to a ziploc bag and cut the tip so you can tip the filling in.
    • Feel free to use any freeze-dried berry of choice!
    • Feel free to swap the peanut butter for any nut butter of your choice!
    • Some shaved chocolate would make for a delicious addition to the top of the dates.

    Make Ahead Tips

    • Meal prep: store in an airtight container for up to 4 days in the fridge. Enjoy directly from the fridge or bring them out to room temperature before enjoying.

    • 18 to 20 medjool dates
    • ½ cup natural peanut butter
    • ½ cup strawberry jam, or any berry jam of choice
